Nothing says summer like sun, BBQ and refreshing cocktails. A favourite of mine is the Pimm’s Cup- a nice mix of sweet liqueur, spicy ginger and cucumber freshness.

I made a spin on the traditional Pimm’s Cup by adding a sliced orange, chopped up strawberries and a lime to a pitcher filled with a full bottle of Pimm’s No. 1 liqueur and letting it stand for 3-4 hours. I wanted to fruit flavours to soak into the alcohol and add a tangier taste.

After letting the fruit soak, rather than adding gingerale right away, I made each drink on demand. There is nothing worse than a fizz-less, watery cocktail! Keep gingerale and ice handy, mix it into a cup with the fruit-infused Pimm’s and add some cucumber and mint garnish.
